Red Garlic from Nųbia
The name given to this garlic variety derives from a small village near
Paceco - Trapani and from the deep red color.
The bulb normally has around 12 cloves and is white outsite, bright red and
intensely flavored inside. Traditionally woven into large plaits ( around 100
bulbs each ) and hung from balconies or stored in cellars and magazines, the
garlic is a vital ingredient in the cuisine of Trapani and Palermo.
On the way to Nųbia, where you can buy the garlic directly from the
productore, you can make a trip to the salt-works of Trapani.
